“Healthy Elvis:” Peanut butter banana English muffins

The Healthy ElvisThe King of Rock ‘N’ Roll’s favorite treat — fried peanut butter and banana sandwiches — sure sound tasty, but for a college student who (a) likes to eat healthy every once in a while, and (b) doesn’t have the time to fry up a midday meal, here’s the perfect alternative.

The protein in the peanut butter helps fill you up, and there’s no frying involved, so you don’t feel weighed down afterward.

Utensils required: toaster, butterknife

Ingredients:

– 1 banana

– 1 English muffin

– 1 tablespoon of honey (optional, though tasty)

– 2 tablespoons of peanut butter

Time commitment: 5-7 minutes

Steps (serves 1):

1. Slice the English muffin in half and pop it in the toaster, keeping it on the medium setting so the muffin doesn’t burn.

2. While it toasts, chop the banana into slices.

3. Once the muffin has popped out of the toaster, immediately swipe it with peanut butter, so the peanut butter can melt a little and get nice & gooey. Then layer on as many banana slices as you’d like, and drizzle a little honey on top for a dash of sweetness.
